Chicken Parmesan Stuffed Peppers
They are easy to make, kid-friendly, low carb (if you’re into that), and absolutely delicious!
I won’t bore you with a long story or essay about the recipe before finally getting to the nitty-gritty. Here it is!
What you'll need:
-4 bell peppers; sliced & seeds removed
-12 oz. breaded chicken tenders (fresh or frozen)
-1.5 cups marinara sauce
-3 cups mozzarella cheese
-1/2 cup parmesan cheese
-1 TBS parsley
-1 TBS minced garlic
-Pinch of crushed red pepper (for a tiny kick!)
-Salt & pepper
Directions:
Preheat oven to 400 degrees. Cook the breaded chicken tenders. Once cooked and cooled, dice into small pieces.
In a large bowl, combine 2 cups mozzarella with Parmesan, marinara, garlic, parsley, and a sprinkle of red pepper flakes, season with salt and pepper. Stir until combined, then add in chicken.
Spoon filling mixture into halved bell peppers and sprinkle with the remaining 1 cup mozzarella.
Bake until peppers are tender, 55 minutes to 1 hour.
Garnish with parsley, then serve!
