Blueberry Protein Pancake Loaf
This is one of my favorite breakfast recipes I’ve made so far! It’s like pancakes to-go, in a nice slice bursting with blueberries and added nutrients from the protein powder. I also love the simplicity of the ingredients and the execution. Pro tip: Pair a slice of this loaf with bacon or sausage, and it makes a WONDERFUL sweet and savory breakfast combination!
What you’ll need:
2 cups all purpose flour
1 1/2 tablespoons baking powder
1 scoop vanilla protein powder; I used the Tone It Up brand, anything works!)
1/4 cup maple syrup
1 1/4 cups milk
2 large eggs
1/4 cup coconut oil or olive oil
1 1/2 cup blueberries fresh or frozen
Directions:
1. Heat oven to 425°F.
2. In a large bowl, stir together the flour, baking powder and protein powder.
3. Add maple syrup, milk, eggs, oil, and 1 cup of blueberries (save the last 1/2 cup).
Mix until combined.
4. Thoroughly spray loaf pan with cooking spray. Make sure there is full coverage to avoid the loaf from sticking.
5. Pour the batter into the baking pan and sprinkle with remaining 1/2 cup of blueberries.
6. Bake for 40-50 minutes. Use a toothpick or fork to test if loaf is baked through. Bake for longer if the batter is still loose.
7. Allow to cool for 10-20 minutes, then slice into portions.
8. To preserve, wrap in plastic and store inside containers for the fridge, or place in the freezer.
Heat a slice for 30 secs. when ready to eat!
